The establishment will serve American & Mediterranean food. The food establishment will be located in one of the units of an existing commercial building and the unit benefits from the already existing electrical and plumbing connections. The estimated square footage of the space is ~1,100. It has an existing small office space, one restroom (ADA compliant), and an existing mob room. I am attaching the Architectural plan, which provide the layout of the kitchen area, the prep-room, and storage on page A3. It also provides schematic for the existing electric connections, demolition, etc. Once a general contractor is hired, or if I work with licensed professionals separately (electrician, plumber, demolition and framing specialist, etc), they will be pulling their permits with Shelby County. Again, as the building benefits from the existing pluming, electrical, and mechanical connections, the licensed professionals will be responsible for extending and connecting them to where they are needed per the layout on the plan. Lastly, we do not foresee that we will have more than 15 persons at any given time in the restaurant. This is primarily a take-out food establishment and all food will be served in disposable food plates and cups.
